Ingredients
1. 9 oz (250 grams) dried Thai rice noodles
2. 2 eggs,beaten
3. 6-8 fresh shrimps, peeled and deveined
4. 3 tablespoons tamarind paste
5. 1 cup bean sprouts
6. 1/3 cup ground or chopped peanuts
7. 1-2 tablespoons fish sauce
8. 3 tablespoons vegetable oil
9. 1 tablespoon chopped preserved turnip
10. 1 tablespoon chopped garlic
11. 1-2 tablespoons sugar
12. 1/2 cup chopped chives
13. 1/2 teaspoon ground dried chillies
14. 1/2 cup fried tofu strips
15. 1/2 cup water
16. lime wedge(for for serving)
Preparation
1. Soak dried Thai rice noodles in cold water for one hour and then drain.
2. Heat the vegetable oil in pan .over medium-high heat, add chopped garlic, shrimps, fried tofu and preserved turnip.Stir-fry for awhile
3. When the shrimps turn pink add tamarind paste, fish sauce, sugar and ground dried chillies.
4. Increase heat to high.Add Thai rice noodles and 1/2 cup of water.Stir-fry for 1 minute and then clear a space in the center of the pan.Put eggs into it and and stir-fry again until they're cooked.
5. Add bean sprouts, ground peanuts and chopped chives, stir-fry for 30 seconds.
6. Remove from heat.Transfer Pad Thai to a serving platter. Garnish with lime wedge.
