Thai-style omelette or Khai Jiaw
Why Thai-style omelette?
Reasons:
1. It's delicious.
2. It's easy to cook.
3. It's cheap (good for the economics)
4. It's fast (about 1-3 minutes)

Ingredients
1. 2 eggs (large)
2. 1/2 cup vegetable oil
3. 1 tablespoon fish sauce or 2 tablespoon light soy sauce
Preparation
1. Heat the vegetable oil in a pan.
2. Break eggs into a bowl and whisk it with a fork until well mixed then add the fish sauce .
3. When the vegetable oil is smoking hot, pour the egg mixture into the hot oil.
4. When browned (about 20 seconds) then flip the side and wait until the other side is browned (about 15 seconds).
5. When omelette is done (golden brown on both sides) then transfer to a dish and serve with steamed rice.
Tips
- If you want to make a fluffy omelette then add 1/2 tablespoon lime juice into the egg mixture before you fry it.
- To make omelette more delicious, you can add chopped onion or ground pork or chopped chives into the egg mixture before you fry it.(I highly recommend onion)
- If you want a good smelling omelette, you can add 1 tablespoon milk into the egg mixture before you fry it.
- Usually eat it with rice but you can eat it with bread too.
