Tom Kha Gai is Thai-style chicken soup with galangal.
Ingredients
1. 1 pound chicken, cut into thin slices
2. 1/2 green onion, sliced
3. 1/2 cup thin sliced young galangal
4. 3 cups coconut milk
5. 1 stem lemon grass, sliced
6. 4 kaffir lime leaves, torn into pieces
7. 5 hot chillies, crushed
8. 1 cup milk
9. 3 tablespoons lime juice
10. 3 tablespoons fish sauce
11. 1/2 cup sliced fresh mushrooms
12. 1/4 cup sliced carrot
13. 1/4 cup sliced baby corn
14. 1 tomato, cut into 4 wedges
15. 4 cilantro leaves, torn into pieces
Preparation
1. Bring the coconut milk to a boil and add chicken, galangal, lemon grass, baby corn, carrot, mushrooms, tomato and green onion
2. Bring soup back to boil and add milk.
3. Bring soup to boil again, add fish sauce, lime juice, kaffir lime leaves, hot chillies and cilantro leaves.Wait 30 seconds and remove from heat.
