Loi Krathong is one of the most important festivals in Thailand.Thai people celebrate the Loi Krathong festival (features sound and light shows and fireworks) throughout the entire country on the full moon day in November.

Loi or Loy means "to float" and a Krathong is lotus-shaped vessel, usually made of trunk and leaves of the banana plant, containing a small candle, three incense sticks, flowers and a coin.
In the evening, Thais gather along rivers, canals, lakes and ponds to float Krathongs, to pay homage to Phra Mae Khongkha, the goddess of rivers and waters.It is believed to wash away the past year's sin, so life can begin anew.
This festival has its origins in the Hindu tradition.Nang (Mrs.) Noppamas was the first one who started to create Krathong in the Sukhothai period.

Tom Kha Gai is Thai-style chicken soup with galangal.
Ingredients
1. 1 pound chicken, cut into thin slices
2. 1/2 green onion, sliced
3. 1/2 cup thin sliced young galangal
4. 3 cups coconut milk
5. 1 stem lemon grass, sliced
6. 4 kaffir lime leaves, torn into pieces
7. 5 hot chillies, crushed
8. 1 cup milk
9. 3 tablespoons lime juice
10. 3 tablespoons fish sauce
11. 1/2 cup sliced fresh mushrooms
12. 1/4 cup sliced carrot
13. 1/4 cup sliced baby corn
14. 1 tomato, cut into 4 wedges
15. 4 cilantro leaves, torn into pieces
Preparation
1. Bring the coconut milk to a boil and add chicken, galangal, lemon grass, baby corn, carrot, mushrooms, tomato and green onion
2. Bring soup back to boil and add milk.
3. Bring soup to boil again, add fish sauce, lime juice, kaffir lime leaves, hot chillies and cilantro leaves.Wait 30 seconds and remove from heat.

1 tablespoon = 3 teaspoons

Yum Nuea ( Spicy beef salad ) Recipe
Yum Nuea or Yam Nua is Thai-style beef salad.
Ingredients
1. 1 pound beef ( sirloin )
2. 3 tablespoons lime juice
3. 2 tablespoons fish sauce
4. 1 tablespoons chopped hot chilies
5. 1 green onion, chopped or sliced
6. 1 tomato, sliced
7. 1 cucumber, chopped
8. 4 lettuce leaves, torn into bite-size pieces
9. 5 fresh coriander leaves, chopped
10. 1 tablespoons sweet chili sauce
11. 2 tablespoons chopped garlic
12. 5 fresh celery leaves, torn into pieces
13. 1 teaspoon salt
14. 1 teaspoon ground pepper
15. 1 tablespoon vegetable oil ( 1 tablespoon is enough )
Preparation
1. Put the beef in a large bowl and mix it with salt and pepper.
2. Heat oil in a pan and cook the beef until it's medium rare.Remove from heat.
3. Cut the cooked beef into thin strips.
4. In another large bowl, mix together the beef, lime juice, fish sauce, sweet chili sauce, hot chilies, green onion, tomato, cucumber, garlic, lettuce leaves, coriander leaves and celery leaves until well combined.

Thai-style omelette or Khai Jiaw
Why Thai-style omelette?
Reasons:
1. It's delicious.
2. It's easy to cook.
3. It's cheap (good for the economics)
4. It's fast (about 1-3 minutes)

Ingredients
1. 2 eggs (large)
2. 1/2 cup vegetable oil
3. 1 tablespoon fish sauce or 2 tablespoon light soy sauce
Preparation
1. Heat the vegetable oil in a pan.
2. Break eggs into a bowl and whisk it with a fork until well mixed then add the fish sauce .
3. When the vegetable oil is smoking hot, pour the egg mixture into the hot oil.
4. When browned (about 20 seconds) then flip the side and wait until the other side is browned (about 15 seconds).
5. When omelette is done (golden brown on both sides) then transfer to a dish and serve with steamed rice.
Tips
- If you want to make a fluffy omelette then add 1/2 tablespoon lime juice into the egg mixture before you fry it.
- To make omelette more delicious, you can add chopped onion or ground pork or chopped chives into the egg mixture before you fry it.(I highly recommend onion)
- If you want a good smelling omelette, you can add 1 tablespoon milk into the egg mixture before you fry it.
- Usually eat it with rice but you can eat it with bread too.
